(makes 2 servings)
1 cup cooked quinoa
1 cucumber, chopped
1 cup cherry tomatoes, halved
¼ cup red onion, finely chopped
½ avocado, chopped
¼ c crumbled feta cheese
Dressing (mix- 2 T olive oil, 1 T red wine vinegar, 1 T chopped parsley)
