BYOBB = Build Your Own Bean Burger

Are you dreaming of summer barbecues like we are?! Whip up a batch of these BYOBB tonight for dinner and freeze any leftovers for the warmer days ahead.

Our tip = Make another batch next week using a different combination of ingredients, repeat the freezing process, and you’ll be stocked up for that Memorial Day barbecue!

Ingredients:

  • 1 yellow onion, finely diced

  • 2 garlic cloves, minced

  • Avocado oil for cooking

Pick 2: vegetables

  • 1 cup carrots, grated

  • 1 cup mushrooms, diced

  • 1 cup broccoli, diced

  • 1 cup cauliflower, diced

  • 1 cup zucchini, diced

  • 1 cup summer squash, diced

  • 1 cup red pepper, diced

Pick 1: grains/starchy vegetable

  • 1 cup quinoa, cooked

  • 1 cup brown rice, cooked

  • 1 cup corn kernels, cooked

  • 1 cup sweet potato, diced and sautéed

Pick 1: binders

  • 1/2 cup whole wheat breadcrumbs

  • 1/2 cup oat flour or ground oats

  • 1/2 cup almond meal

Pick 1: beans, drained, liquid reserved

  • 1.5 cups canned black beans

  • 1.5 cups canned chickpeas

  • 1.5 cups canned pinto beans

  • 1.5 cups canned cannellini beans

  • 1.5 cups lentils

Pick 2: fats

  • 1/4 cup nuts (walnuts, almonds, cashews)

  • 1/4 cup seeds (chia, ground flaxseed)

  • 1/4 cup unsweetened nut/seed butter (tahini, peanut butter, almond butter)

  • 1/4 cup avocado

Pick 3: flavor

  • 1 tsp chili powder

  • 1 tsp cumin

  • 1 tsp curry powder

  • 1 tsp paprika

  • 1 tsp cayenne pepper

  • 1 tsp Italian seasoning

  • 1 tsp dried oregano

  • 1/4 cup fresh herbs (cilantro, basil, chives)

Instructions:

1. Cook onion, garlic, and 2 additional vegetables over medium heat in 1 tbsp avocado oil until tender. Add to food processor.

2. Add remaining ingredients to food processor (grains/starchy vegetable, binder, beans, fats, flavor) and pulse until just combined, leaving some beans whole (avoid over processing!).

3. Form into ~8 patties. If too dry/wet, add a splash of reserved bean liquid or a sprinkle of binder respectively until consistency allows you to form patties.

4. Place the formed patties into the refrigerator to set, about 20 minutes.

5. Cook the patties - heat 1 tbsp avocado over medium heat, add patties and cook until browned on each side, about 4 minutes each.

6. Serve with desired toppings!
