SUMMERTIME CHICKEN SALAD

Who’s ready for the weekend!? I know I am. Here’s a healthy, quick, easy and colorful chicken salad recipe that’s good on a sandwich or on top of a salad full of veggies. During the summer months, I am often asked about simple and light lunch ideas on these scorching hot days. Chicken salad is my go-to. It’s so versatile and nutritious. You can’t go wrong!

Ingredients:

-3 C of shredded or chopped chicken (~1 lb, I typically poach mine)

-1/2 C plain Greek yogurt

-1/2 C chopped walnut

-1 C red grapes, quartered

-1/3 C red onion, chopped

-1/3 C red bell pepper, chopped

-1/3 C orange bell pepper, chopped

-1/2 C celery, chopped

-Juice from one lemon

-Salt and pepper to taste
