Quick Quesadillas For Cinco De Mayo (Or Any Day!)

Happy Cinco de Mayo!

We've got you covered for dinner tonight (or really any night!) with our Quick Quesadillas, which have more nutrition packed in than your classic cheese version.

Ingredients:

Whole wheat or corn tortillas

Cooked diced/shredded chicken or black beans or combo of both

Shredded cheese

Combo of vegetables like:

  • diced bell pepper, onion

  • chopped spinach, kale

  • diced summer squash, zucchini

  • shredded carrots

  • note: can also use defrosted frozen vegetables, you may want to squeeze out extra moisture before adding (we like Trader Joe’s fire roasted red peppers and onions!)

Salsa, guacamole, plus a simple side salad for serving

Instructions:

1. Heat skillet over low-medium heat

2. Place tortilla flat in pan. Cover half with a layer of shredded cheese

3. Sprinkle chicken/beans and vegetables over the cheese

4. Sprinkle another thin layer of cheese over filling

5. Fold uncovered half of tortilla over toppings. Press down to make a half moon.

6. Cook until bottom is slightly toasted (~2 minutes), then flip and cook an additional 1-2 minutes until cheese is melted and tortilla is golden brown

7. Serve alongside salsa, guacamole and a simple side salad
